We have been trying to eat a bit healthier in our home and trying out new recipes.
Avocados not only have some protein in them they also help boost your metabolism!! SCORE!!
This one was a winner!!!
I cut open 3 avocados and then removed a little bit extra in the center after I removed the seed to make room for an egg.
I also chopped up green onions, ham and tomatoes.
Easiest way to bake them so they do not flip to the side is to allow them to cook in a cupcake tin. It helps balance. I added 1 egg into the half then topped it with the toppings of our choice.
Be sure to add salt and pepper to taste.
Bake in a 425 degree oven for 15-20 minutes. Then we added a slice of Havarti Cheese and allowed to bake for another 2 minutes more till the cheese was melted.
Before you add the cheese, be sure your egg is cooked to the consistency you want. Everyone’s ovens bake differently so your time may vary.
The Avocado is delish and especially when warm. It was a great Saturday morning breakfast!
Ingredients:
3 Avocados (more or less depending on your needs)
1 slice of lunch ham finely diced
1 small tomato finely diced
6 eggs
6 slices of Havarti Cheese
3 green onions sliced up
Salt/Pepper to taste
Directions:
1- Preheat oven to 425 degrees
2- Grease a cupcake muffin tin (grease because if any overflow/spill from the avocado will help your clean up later
3- Cut open Avocados and remove pits
4- Remove a bit more of the center for a area big enough to hold 1 egg
5- Lay your Avocados on the tin and crack 1 egg into each half
6- Top with all your toppings except cheese
7- Salt and pepper to taste
8- Bake Avocados for 15-20 minute until your eggs are cooked to your favorite consistency.
9- 2 minutes before they are done, melt a slice of Havarti Cheese on top
10- Allow to cool a few minutes and enjoy!
