This is my husbands new favorite cupcake that I have made. I have actually made these TWICE in one week. He loves them THAT MUCH.
I usually make my cupcakes from scratch, and because this one is NOT from scratch and I call this a CHEATER-cake cupcake (meaning I cheated thru the whole process in my opinion) of course he loves these and devours them.
I must confess they are pretty rockin’. And very quick and easy to make.
For those that know me- don’t judge me HAHA I cut corners on this yummy cupcake to the bitter end. *cheesy grin*
Start with a can of Cinnamon Rolls. I use the 8 pack from my new favorite store ALDI’S. (do you have one? If not you are missing out.. great deals and they taste amazing)
This is not the jumbo Cinnamon Rolls they sell….
I want to make a full 2 dozen- so I use 3 cans. They only cost 1.69 per can at Aldi’s 🙂
This is what it looks like. First add in cupcake liners into your cupcake pans. (standard size)
Then proceed and squish the cinnamon roll in your hand like a flat pancake
Once they are flat place them into the liner and make a “pie crust” for each of you cupcakes. They don’t need to be really neat.
Bake the crusts at 375 degrees for 6 minutes. Remove from the oven (I forgot this photo) They sorta puffed up and the hole/well of the crust is gone. Use a spoon to open it back up so you can add pie filling. Don’t be shy, push a nice indention into the cinnamon roll.
I used a can of Apple Pie filling from Walmart. (I wish Aldi’s sold apple pie filling) This is a large can.
I then cut up the apples in the bowl. SO they were smaller chunks.
Then go ahead and fill each cupcake with apple pie filling. About 1 spoon full.
1 stick of butter and about 1 cup of crushed graham crackers (that I crushed in a ziptop bag) and 1 tablespoon of cinnamon all mixed up well in a bowl.
Top each cupcake with a spoon full of the graham cracker mixture.
Return the cupcakes to the oven and continue to bake at 375 degrees for another 6 minutes. (I have a convection oven you may need to increase the time if you do not)
Each tube of cinnamon rolls come with this nifty pouch of icing. YUM!
Snipped off the end and drizzled icing over 8 cupcakes. Since I did 3 tubes of cinnamon rolls, I had 3 punches of icing to use. Do this when the cupcakes are hot out of the oven.
Once they are cooled they are ready to enjoy.
They are AMAZING!!! If you love fruity pies or cinnamon rolls this is for you!
They do not stick to the paper liners at all. I was happy to see that. Once they were cooled they were easy to peel away the paper.
They would be a wonderful addition to a brunch or a breakfast! They even taste amazing the next day. I put one in my microwave for 12 seconds and they are nice and warm and ready to enjoy again!
Bake: 375 degrees F
Makes: 2 dozen
Ingredients:
3 tubes of Cinnamon Rolls (8 rolls) Aldi’s brand preferred
1 large container of Apple Pie Filling
1 stick of butter
1 cup of crushed graham crackers
1 table spoon of cinnamon
24 cupcake liners
Directions:
-Preheat oven to 375 degrees
– Add paper cupcake liners to your cupcake pan
-Remove cinnamon rolls one at a time and press between your hand to flatten and put in the bottom of your cupcake liners
-Bake 6 minutes
-Remove from oven & using spoon to make an indention/well in the center for filling
-Add 1 spoonful of apple pie filling into the center of each cupcake (I prefer to chop up the apples a bit smaller before)
-In another bowl melt stick of butter, and add 1 cup of crushed graham crackers and 1 tablespoon of cinnamon and mix well
-Spoon on 1 spoonful of graham cracker mixture to the top of each cupcake
-Return to oven and bake an additional 6 minutes. Till golden brown
-Remove from the oven and proceed with drizzling on icing that come with your tubes of cinnamon rolls
-Allow to cool then enjoy!
Who would ever have thought to smash cinnamon rolls and turn them into a pie crust? Only you. Thanks for the in-progress photos. Gonna save this til autum (if I can make it that long – LOVE anything apple cinnamon).
