March 2nd is Dr. Seuss birthday. I wanted to try to make a new dessert this year for our annual birthday dinner.
I searched for many different recipes. Because I waited till the afternoon of the dinner to even plan anything I had to use what was on hand. It turned out very yummy. Even with substitutes to the recipe I found online.

But like I said- I had to use what I had on hand and make a few changes based on what I found in my fridge/pantry.
This will make 5 personal sized desserts.
Let’s get started 🙂
Start with 1 softened block of cream cheese
Beat the cream cheese well till smooth. Beat in the sour cream into the mixture as well.
In another bowl mix together the milk and pudding mix on low for 2 minutes.
Now add the pudding mix to the cream cheese mixture. Mix together well.
Here is my first substitution. I did not have frozen whipped topping. I only had a full can of whipping cream. Personally I like whipping cream better and it worked. So I squirted in a whole bunch of it into the bowl. Recipe calls for 12 oz. That is a nice size tub of whipped topping. So all I can say is I eyeballed what I thought was a plentiful amount. I would say I used 3/4 of a can.
Now carefully fold in all the whipping cream. Do not mix it. Gentle folds just to incorporate this into your mixture.
Set aside for a few minutes.
In another bowl I did my 2nd substitution- I did not have vanilla flavored cookies. I had graham crackers only. I crushed up my 1 1/2 cups of graham crackers and added my 1/4 cup melted butter. Mixed well.
I used 1 large can of Strawberry Pie Filling. YUM! I have never used this before and I saw it at my local Aldi’s and thought I would try it in something. Glad I had this on hand 🙂 It was delicious!
In my clear cups, I added 1/5 of the graham cracker mixture, then used a 2nd cup to press down the cracker mixture to form a little crust at the bottom of the cup.
I started with a spoon full of strawberry pie filling.
Then alternated it in the cup. 2 layers of strawberry and 2 layers of cream cheese filling. With a dab of strawberry at the top just for looks. I then put it my refrigerator till it was time for dinner. I allowed it to set for an hour.
It was extremely yummy! A great no bake dessert that reminded us of the stripes in the Cat’s Hat in the book – Cat and the hat. 🙂 This will be a dessert I make again for sure!
There was a little bit of cream cheese mixture left in the bowl– no need wasting space in the fridge- so I just finished that off to hide any evidence of extras. This was a bowl and spatula I did not want to share with the kids HAHA

Personal Strawberry Cheesecake Dessert
Makes 5
Ingredients:
1 package (8 ounces) cream cheese, softened
1 cup (8 ounces) sour cream
1/2 cup cold milk
1 package (3.4 ounces) instant vanilla pudding mix
1 can of Whipped Topping
1-1/2 cups crushed graham crackers (1 package)
1/4 cup butter, melted
1 can (21 ounces) strawberry pie filling
Directions:
