Chinese dinner’s for 4 are a big pricey and so we created our own wanna-be Chinese meal. It was awesome! And probably alot better for you. I will have to break down the meal for you how we created it.
Rice-
Avoid the fried rice (although fried rice is yum!!)
1 cup of white rice with 2 cups of beef broth
2 tablespoon of olive oil
Combine and bring to a boil. Cover and set eat to simmer for 20 minutes. Do not disturb or stir till the 20 minutes have passed. Keeping in all the moisture. Makes the best “brown” looking flavorful rice!
Veggies-
We simply steamed in our steamer fresh broccoli with salt.
Chicken-
2 full chicken breasts (4 halves)
1 cup white flour
1 tablespoon garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp red pepper (optional)
Olive Oil
In a zip-top bag, combine all your ingredients together except the olive oil. We used a gallon size bag.
Chop your chicken into bite size chunks of your choice.
Toss chicken into zip-top bag seal and shake/cover chicken with mixture.
In a pan, just lightly cover the bottom of the pan with your olive oil, and set your heat to medium to medium high heat. Once hot, remove your chicken chunks from bag and cook until golden brown. Remove and cool on paper towels to absorb any extra oil.
Pineapple/Ginger Sauce-
2 tblsp brown sugar
1 tblsp cornstarch
2 cans (8 ounces each) crushed pineapple, with juice
1/4 cup soy sauce
1/4 tsp garlic salt
1/4 tsp ground ginger
Mix all your ingredients together in a sauce pan, over medium heat. Stir constantly. Bring to a rolling boil and remove from heat.
My kids honestly thought we ordered out Chinese. It was very delicious and we really enjoyed the sweet/salty sauce over our chicken/rice. I wouldn’t call this exactly like the takeout. But on a budget, to get the ginger taste. It was a great alternative!
