Chad’s Peppermint Chocolate Chocolate Chip Cookies (CPCCCC) HAHAHA
These are great and they cook soooo beautifully!!
Just a light hint of peppermint for the holiday season. This boy is on a roll. He got himself a new kitchen aid mixer for Christmas (well it was a gift to me, but who is he kidding) and went to playing in the kitchen and this is a keeper!!!
Oven 350 degrees F. Makes approx 3 dozen cookies.
Ingredients
3 sticks of butter softened ( 1 1/2 cups)
3/4 cup sugar
1 3/4 cups packed brown sugar
3 large eggs
1 tsp vanilla extract
3 3/4 cups all-purpose flour
2 tsp baking soda
1 tsp salt
1/2 cup semi sweet chocolate chips (melted)
2 package of milk chocolate chip morsels
1 1/2 tblsp peppermint extract
1 cup Ghirardelli Chocolate Chips
With a mixer, beat butter until creamy, slowly add in sugars, and beat till nice and fluffy. Add your eggs vanilla and peppermint, beating well.
In a separate bowl, combine flour, baking soda and salt. Gradually add to the butter mixture and beat until well blended. Add your 1/2 cup of melted semi sweet chocolate. Mix well. Stir in chocolate morsels and Ghirardelli chips. Drop cookies by the 1/4 cupfuls about 2 1/2 – 3 inches apart into a greased baking sheet (or however you prepare it). Bake for 11-12 minutes till light brown. These cookies need to cool for at least 2 minutes on your baking sheets before you remove and cool on wire racks.
YUMM!!! They are soft yet chewy / crispy. And they have wonderful texture!!
