These were so moist and delicious. I enjoyed this cupcake because I didn’t have to frost it. It has a yummy crumble on top 🙂 This is Chad’s made up recipe. He did a GOOD JOB!!
Cut up 1 1/2 cups of apples. We used the canned apples in water.
In a skillet we cooked it for a few minutes with 1/4 of a cup of brown sugar and 1 tablespoon of cinnamon.
Then we mixed up the batter. 1 yellow cake mix, 1 box of instant vanilla pudding, 3 eggs, 1 cup of sour cream, and 1 1/2 cups of our apple/brown sugar mixture.
Mixed well and poured into cupcake liners.
We then added our crumble. In another bowl mixed up 1/2 cup of brown sugar, 1/2 cup of flour and 1 tablespoon of cinnamon. Then we put a heaping spoonful on top of all the cupcakes. Baked 15-17 minutes at 350 degrees.
They came out SOOO DELICIOUS!!!! YUM YUM!!!!!
Apple Sour cream Crumble Cupcake
Bake 350 degrees
Makes 24-28 cupcakes
Cupcake:
1 yellow cake mix
1 box of instant vanilla pudding
1 cup of sour cream
3 eggs
1 1/2 cups chopped apples
1/4 cup brown sugar
1 tablespoon cinnamon
- In a skillet cook till apples are soft. Cook your cut up apples, brown sugar and cinnamon till done.
- In your mixing bowl mix your cake mix, eggs, pudding and sour cream till well mixed.
- Add in your apple mixture and combine till mixed well. Do not over mix.
- Pour into your cupcake liners.
Crumble:
1/2 cup brown sugar
1/2 cup flour
1 tablespoon cinnamon
- In a bowl mix your 3 ingredients together well.
- By the spoonful sprinkle a spoonful of crumble on each of your cupcakes.
- Bake at 350 degrees for 15-17 minutes till done.
- Cool and enjoy!
We ate these with company for a BBQ cook out and they were a hit. Everyone went back for seconds. I can’t wait to make these again!!
